To make my Cajun chicken pasta one pot we're going to start by preparing all the

vegetables and thinly slicing your chicken breasts. Then you're going to heat

your olive oil over a high heat for about one to two minutes until hot and

shimmering and then add in your sliced chicken. Add a little salt and pepper and

then continue to fry for about six minutes until seared all round and cooked

through in the middle. Then remove the chicken using a slotted spoon allowing

the juices to stay in the pan and set the chicken aside while you carry on

with the rest of the cook. Then turn the heat down to medium-low add your sliced

onions and peppers and fry stirring often for about three minutes just until

they've started to soften. Then add in your garlic, your smoked paprika, a little

cayenne pepper, salt and pepper and then stir for one minute. Then add in your hot

chicken stock followed by your hot water, your dried oregano, your dried thyme and

your pasta. Then just stir until well combined and you're going to turn the

heat up to high, bring to the boil and then turn it down slightly to medium and

continue to cook for about 14 minutes stirring often until most of the water

has been absorbed and then when there's about that much water left and the

pasta is tender you can add your chicken back in. Then just stir that through

until it's coated in all the sauce and continue to cook for two minutes

stirring every now and then. Lastly remove the pan from the heat and stir
