This easy peach & tomato tart screams summer! Using ready rolled puff pastry, a basil & garlic ricotta base, topped with seasonal tomatoes and peaches and finished with a generous drizzle of balsamic glaze.

To start take your puff pastry out of the fridge 10 minutes before you're ready to use it roll the

sheet out onto a baking tray and cut off the excess baking paper. Use a sharp knife to score

around a border of about half an inch. Bake for 20 minutes at 200 degrees or 180 fan or 400 fahrenheit

In the meantime, if you're making your balsamic glaze, instead of buying it, add 100ml or half a cup of balsamic vinegar to a small pan along with 1 tablespoon of honey

Bring to a boil over a medium heat, then reduce heat to medium low and simmer until reduced and just thick enough to coat the back of a spoon

Then leave to cool off. Next, prep the rest of your toppings. You can choose what balance you prefer for this tart

I prefer to go more peaches, less tomatoes, but you can do it the other way around

With that in mind thinly slice either 2 or 3 peaches as well as around 200 of tomatoes Then to prepare your ricotta mixture you will need a tablespoon of finely chopped basil leaves

Next drain your ricotta briefly so it's not watery. Add in the basil as well as two garlic

cloves, a little salt and black pepper. Mix well and refrigerate until ready to use

Once the pastry's out of the oven don't do what I did. Wait five minutes for the pastry to cool

slightly then use the back of a spoon gently running it across the puff pastry to flatten

I forgot to wait and that's why mine has gone really flaky. Then spoon on your ricotta mixture

and peach slices. As I like to do more peach than tomato I lay two peach slices and alternate with

can add on some basil leaves for decoration if you like then drizzle over the balsamic glaze
