First, you'll make a cherry lime syrup that will keep in the fridge for two to three weeks

and add that to sparkling water along with a few lime slices and ice

To make the cherry lime syrup, add two bags of frozen black or dark cherries to a medium pan over a medium heat

Also add in 110 grams or half a cup of caster sugar, 350 mils or one and a half cups of water

Give it a good stir and then cook for five minutes. Remove from the heat and add 2 teaspoons of lime juice

Leave to cool for around 30 minutes. Then blend the syrup until smooth

You can use a stick blender in the pan or transfer to your regular blender

To serve, use the 2 to 1 ratio of sparkling water to syrup
