This easy sausage egg fried rice is everything you want it to be, packed with flavour and totally satisfying

Suitable for toddlers and it has hidden mushrooms in too, so great for fussy eaters

To start, finely dice your onion. You'll find it easier to do if you leave the top of the onion intact while you chop

Then I used pre-sliced mushrooms and just roughly chopped them down into smaller pieces

My fussy eater son actually came up with the idea for this recipe and decided he wanted the mushrooms to be hidden

Next, you want to put all five large eggs in a jug and beat by hand

With prep done, you want to start cooking your rice. You can cook it how you usually do or follow my instructions included in the recipe

Then start frying your chipolatas in a large wok or wide bottom shallow casserole pot over a medium heat for around 12 minutes, turning often until browned all over and cooked through

Then cut them into small slices. I find it easiest to do using a fork and clean kitchen scissors as they will be hot

Give your pan a quick wipe down and add the butter over a medium heat and once melted add the onions and fry for five minutes until softened, stirring often

Then add in your mushrooms and fry for a further five minutes again, stirring regularly until golden

Next, pour in about half the egg, stirring it quickly through the vegetables

Pour in the rest of the egg and stir again well. Tip in the rice, stirring the egg and vegetable mixture through briefly, then add in the two and a half tablespoons of soy sauce as well as the sliced chipolatas

Stir and fold carefully, especially if your wok is on the smaller side, it will be very full

Do this for three minutes and then serve immediately
