These Cajun chicken pita breads are one of my favourite one-pot dinners. I'll recommend how
0:04
much spice to add for your family and you can actually do a super cheat and buy the sauce
0:08
instead of making it from scratch if you like. To start, finely slice your bell peppers. These can
0:13
be red, orange or yellow or a mixture. You can prep these earlier on in the day if you like and
0:18
refrigerate. You'll also want to finely slice your onions too. If you're ready to cook them
0:24
tip them into an extra large oven-proof dish or roasting pan. Next, add in your mini chicken breast
0:29
fillets or tenderloins followed by olive oil, smoke paprika, cayenne pepper, dried thyme
0:38
dried oregano, plus garlic powder, which I forgot to add here, black pepper, salt and then you want
0:46
to toss until everything looks evenly coated. Then it's ready to bake for just 20 minutes
0:52
In the meantime make your creamy cajun sauce to spread in the pita bread. If you want to skip this
0:57
step these pitas go really well with Nando's piranese and yes I know that's Portuguese but it
1:04
is a tasty alternative for when you just want to put the dish in the oven and get on with something
1:08
else or go put your feet up for 20 minutes. To make the sauce from scratch you'll need light cream
1:13
cheese, a little mayonnaise, some tomato puree or paste, smoked paprika again, garlic powder and salt
1:19
and black pepper. Then just mix until smooth. You'll also want to toast your pita breads now
1:25
and then once the chicken and veg mix is out of the oven spread the sauce on one side fill with
1:31
the chicken mix and that's it a quick and easy family dinner is served
